It’s one of my go-to recipes when I don’t have too much time to bake. So easy to make, such a great taste, not too heavy and chewy, just the way I like it. A quick pie, not made to impress anything else than the taste buds.
3 Egg Whites 1 cup Peacans, fincely chopped 1 cup Sugar 2 tsp Vanilla Essence 22-26 Ritz Crackers crumbled * 1/2 tsp Baking Powder 1 Pint Heavy Cream (Wipping Cream) whiped stiff or cool whip Unsweetened Cocoa or grated chocolate Pinch of salt A little bit of Love Beat the Eggwhites until stiff Preheat oven to 350 degrees and grease a 9" pie pan. Beat egg whites and baking powder until stiff. Blend in sugar and vanilla. Fold in crackers and nuts. Pour into greased pie pan. Bake for 30 minutes at 350 degrees. Cool completely. Top with freshly whipped cream or whipped topping to serve. Preheat oven to 325 degrees. Grease a 9-inch pie pan Beat egg whites until stiff. Blend in sugar, vanilla and baking powder. Add the crackers and the rest of the ingridients beside the heavy cream. Pour the batter into a pie pan and bake for 30 minutes. Let it cool completely and top with the whipped topping of choice. Add a little bit of cocoa, grated chocolate or caramel sauce on top for decoration. Chill in the refrigerator Enjoy!~

This is so fun for me to read! The recipe is very close to a pie my grandmother would make when I was a child. I’ve thought of it from time to time, but basically forgotten about it! I must make this soon. I’ve been in a very nostalgic mood lately! 😉

I am not a big pie eater, never got really used to the pie concept, but missed the tortes and cakes I had been growing up with. The Ritz Cracker pie is one of my favorites because it’s easy, cheap and surprisingly light.

I’ve heard of this pie…wasn’t it invented during wartime because there was a lack of more typical pie ingredients? Anyway, I’d never seen a recipe for it before. Very interesting. I just don’t know though, my family is pretty picky about their pie…I need to taste it I guess, just to see…it seems weird to me, but I believe you if you say it’s good!
I would NEVER ever have tasted it, if I would have known about the ingredients. It was on a buffet and when everybody raved over it, I had a piece myself. It tastes nutty, not overly sweet, very much on the light side, which is perfect for me, because I DO NOT EAT PIES. 😂😂

I have never heard of a salt-free life style. We live a low sodium lifestyle, which sucks. 🙂
