“It is believed that the onion originally came from India. In Egypt, it was an object of worship —why I haven’t been able to find out. From Egypt the onion entered Greece and on to Italy, thence into all of Europe.” — Better Living Cookbook

pancakes with salad

I love pancakes, especially the thin European pancakes.  I use them like I would use a flatbread and put my salad on top of it for a quick lunch. I make pizza pancakes or fill them with leftovers; if I have a sweet tooth, I use my jams or fruits.

I use the same basic recipe since I started cooking, but somehow they pancakes turned out differently, and it startled me. How could that be? Sometimes I had a fluffy and light pancake, other times a heavy pancake -still eatable, but different! I didn’t change the ingredients, so there had to be a logical explanation. I made the flour responsible for the consistency of the pancakes, or the eggs -something had to get the blame.

Finally, it’s spring, even here in the midwest. The summer sheets are on the beds, jackets and coats have been put away until autumn. The weather went from terribly cold to hot without anything in between. The official start of summer is just four weeks away.

It is true, I had a cooking blog. I love to cook and enjoyed writing about it. I shared some of my European recipes with my blogging friends. The blog was called “Bringing worlds together in my kitchen.”

Salad cake 5

The 4th of July is just around the corner; there will be get-togethers, picknicks and BBQ’s. What do we provide to eat? What do we bring? I always try to offer a side salad, but somehow it never turns out right. How do you serve a salad for lots of people and make it look good for hours? I made a mixed salad and served it in a big bowl. It looked nice for a while until people started to dig in; tossing and turning, trying to get what they liked -leaving behind a mess that nobody wanted anymore.

nerves 2

Writing our weekly shopping list is not my favorite thing to do. Once again I was sitting there between cookbooks and recipe cards, trying to come up with some ideas for a balanced or not so balanced meal plan.

What one thing are you really glad you did yesterday?

I tried a recipe that I didn’t want to cook at first, because it just didn’t sound right. A good friend had sent it to me and yesterday I finally decided to make it, just so that she would leave me alone.

Cooking is my passion and standing in the kitchen, with Dean Martin singing in the background and cooking for friends and family, brings joy into my heart. I learned cooking from the best cook I have ever known, my Grandmother. She could make delicious meals out of nothing, she never used a recipe and she taught me the true meaning of important measurements like “a little bit” and the most most important one “to taste”.
