pancakes with salad

I love pancakes, especially the thin European pancakes.  I use them like I would use a flatbread and put my salad on top of it for a quick lunch. I make pizza pancakes or fill them with leftovers; if I have a sweet tooth, I use my jams or fruits.

I use the same basic recipe since I started cooking, but somehow they pancakes turned out differently, and it startled me. How could that be? Sometimes I had a fluffy and light pancake, other times a heavy pancake -still eatable, but different! I didn’t change the ingredients, so there had to be a logical explanation. I made the flour responsible for the consistency of the pancakes, or the eggs -something had to get the blame.

Finally, it’s spring, even here in the midwest. The summer sheets are on the beds, jackets and coats have been put away until autumn. The weather went from terribly cold to hot without anything in between. The official start of summer is just four weeks away.

It is true, I had a cooking blog. I love to cook and enjoyed writing about it. I shared some of my European recipes with my blogging friends. The blog was called “Bringing worlds together in my kitchen.”

The other night I made an Austrian stir fry. I cut the meat off the bone, sliced it thin and prepared the dish the way I always do. Later on when we were eating my husband found a piece of bone on his plate.

Time to plan my garden for this year. As always we will have lettuce, tomatoes, peppers, squash, onions and of course my beloved kale. There is a corner just for herbs, and another spot is reserved for some newcomers, that we just have to try.

zimt-sterne

Cinnamon star cookies (Zimtsterne) are a traditional part of the Holiday Season in Austria and Germany. Cinnamon and almonds taste great together; the smell of the cookie in the oven is mouthwatering. The history of the cookie is interesting as well. Cinnamon was a rare and rather expensive spice in Europe, and almonds had to be imported. Only the rich and Royals could afford both throughout the year. Ordinary people used cinnamon and almonds only for once-a-year festivals such as Christmas.

Do you believe in love at first sight?

I do, very much so and I am not just talking about the love for your partner. I think the same thing happens when we meet our future best friends.

The smell of fresh baked cookies was hanging in the air. We were playing outside, we could smell it from a mile away and it drove us crazy. I don’t think there is anything more tempting to a child than a warm, fresh-baked cookie.
